DIRECTIONS
- Prepare all fruits and vegetables in accordance with guideline card A-G 31. Drain and roughly chop canned apples ¼-inch piece.
- Thaw CP: If frozen, thaw eggs under refrigeration at 41°F (5°C).
- Preheat fryer to 350°F (177°C).
- Fritter: Sift together flour, baking powder and salt into mixer bowl.
- In a separate mixing bowl, combine chopped apples, sugar, cinnamon and nutmeg. Toss to combine.
- Add apple mixture to sifted dry ingredients. With a paddle attachment, mix apples with dry ingredients on low speed for 30 seconds, until thoroughly coated with flour.
- Add apple juice, eggs and vanilla extract to the mixer bowl. Continue to mix on low speed for 45 seconds, until just combined.
- Using a No. 40 scoop, portion batter into 350°F (177°C) fryer. Fry fritters for 3 to 4 minutes until golden brown on both sides. CCP: Internal temperature must reach 145ºF (63ºC) for 15 seconds. CP: Hold for hot service at 135°F (57°F).
- Apple Glaze: In a mixing bowl, whisk together powdered sugar, apple juice, cinnamon and nutmeg.
- While still warm, top fritters with apple glaze, approximately 1-½ tsp (0.25 oz) per fritter. Serve immediately.
RECIPE NOTES
- For best results, fry apple fritters in batches to maintain freshness.
- In Step 9, you may omit making the apple glaze, and lightly dust the apple fritters with additional powdered sugar.
