DIRECTIONS

CP: If frozen, thaw eggs under refrigeration at 41°F (5°C).

  1. In accordance with Armed Forces food safety protocol, reference the Produce Guideline Card for specific wash, sanitize, rinse and handling instructions for each fruit/vegetable in the recipe; this is critically important to ensure the safety of this food.
  2. Sift together the flour, sugar, baking powder, salt, baking soda, cinnamon, nutmeg and clove into a mixer bowl.
  3. Add the applesauce, oil, and eggs to the dry ingredients. Mix on low speed for 15 seconds; scrape down bowl. Continue mixing on low speed for 10 seconds. DO NOT OVERMIX. Batter will appear lumpy.
  4. Add diced apples to batter. Mix on low speed for 15 seconds until just combined.
  5. Lightly spray each muffin pan with nonstick cooking spray. Fill each muffin pan cup ⅔ full with ¼ cup (2-⅔ oz) batter (1-No. 20 scoop).
  6. Mix together sugar and cinnamon. Top each muffin with ½ tsp of cinnamon sugar.
  7. In an oven on convection mode, bake at 350°F (177°C) on low fan for 20 to 22 minutes until muffins are lightly golden brown. 
  8. Transfer muffins from pans to a wire rack to cool.

RECIPE NOTES

  1. This recipe was developed using a Rationale Combi Oven set to convection mode.  If using other models of combi oven or a convection oven, times may vary (using an older convection oven may require extra cook time to achieve the desired final product). 
  2. In Step 4, reserve ¼ cup (1-¼ oz) of the sifted dry ingredients to lightly coat diced apples before folding them into the batter. Dusting apples with flour before incorporating helps prevent apple pieces from sinking in the batter.
