DIRECTIONS

  1. Thaw CP: If frozen, thaw eggs under refrigeration at 41°F (5°C).
  2. Preheat oven to 325°F (163°C).
  3. In a mixer bowl with a paddle attachment, mix mashed sweet potatoes, sugar, oil, egg, and vanilla extract on medium speed for 1 minute. Scrape down the bowl.
  4. Sift together flour, baking soda, cinnamon, nutmeg, clove and ginger. Add half of the dry ingredients to the mixer bowl. Mix on low speed for 30 seconds. Scrape down the bowl.
  5. Add remaining dry ingredients and raisins. Continue mixing on low speed for 30 seconds, until just combined.
  6. Lightly spray each sheet pan with nonstick cooking spray. In each sheet pan, place 1-¼ gallon (7 lb 8 oz) of batter.
  7. In an oven, on convection mode, bake at 325°F (163°C) for 22 to 24 minutes.   
  8. Cool. Cut 6 x 9.

RECIPE NOTES

  1. This recipe was developed using a Rationale Combi Oven set to convection mode. If using other models of combi oven or a convection oven, times may vary (using an older convection oven you may need to add a couple to few minutes to the cook time to achieve the desired end state for the recipe).
  2. In Step 4, melted shortening may be used in place of canola oil. The Go for Green® code will be Red.
  3. For baking fresh sweet potatoes: scrub potatoes and remove any blemishes; place potatoes on sheet pan; using a convection oven, bake at 400°F (204°C) on high fan, closed vent for 40 to 45 minutes. Remove from oven; cool; remove/peel skin from potatoes; mash potatoes; use as specified in this recipe.
  4. Garnish Abracadabra Bar with cream cheese frosting or powdered sugar.
